Lemon Garlic Dressing

Ingredients:

Juice of two organic Lemons

2 Tbsp Raw Apple Cider Vinegar

2 Tbsp Red Wine Vinegar

4 cloves pressed Garlic

1 Anchovy* or 1 inch of Anchovy paste (optional)

sea salt and pepper to taste

1/4 cup Nutritional Yeast

1/4 to 1/3 cup Extra Virgin Olive Oil or Avocado Oil


Assembly:

  1. Place all ingredients in a glass jar in the order listed. Secure lid and shake vigorously to combine. Let dressing rest for 15 to 30 minutes to let flavors combine. Dressing can be stored on the counter in a cool dry place for up to 3 days. For longer shelf life store dressing in the refrigerator, return to counter before using to bring to room temperature, shake to combine. Enjoy!

  • *If using Anchovy versus anchovy paste you will want to chop or mash the anchovy prior to adding to the jar.

Garlic is a super food to the heart and immune system, it is part of the Allium Family. Garlic promotes over all heart health and reduces blood pressure. It’s antibacterial and antiviral, and is believed to promote healthy weight control. Research has shown that garlic consumption may aid in our metabolism of iron. Garlic potentially reduces the risk of most cancer types, and support overall heart health by consuming just one clove of garlic a day. To obtain the largest health benefits from garlic it is best to break the outer skin by crushing the garlic with the back of a knife, peel away the white outer layer, and let the crushed garlic clove rest for 5 to 10 minutes before chopping or pressing.This will activate the health promoting benefits of the garlic and allow the nutrients to be more readily absorbed when consuming. Use fresh raw garlic for the health promoting benefits. Even though flaked, died garlic is convenient all you are really getting is the flavor of garlic not the health promoting benefits. Garlic can be found year round in California, peak season for garlic is June through December. When purchasing garlic you want to look for firm tight bulbs with medium to large cloves. Avoid bulbs of garlic that are soft, shriveled, moldy or have begun to sprout, this will only reduce quality and flavor.

Nutritional Yeast is gluten free, loaded with B vitamins and has a nutty cheesy flavor. It is a great alternative for people who might have a dairy intolerance looking to add cheesy flavor to food. Nutritional yeast is great in dressings, soups stews, salads and veggies. Really any food you might add cheese to Nutritional Yeast can help fill the void, it’s a food everyone can enjoy. The health benefits of Nutritional Yeast range from supporting energy, immune function, blood sugar stabilizations and skin, hair and nail strength. My favorite brand is Bragg’s. There are other brands out there such as Bob’s Red Mill and Frontier Naturals.
