Almond Butter

Ingredients:

  • 1 pound Raw Organic Almonds

  • 1 tsp quality sea salt (optional)

Assembly:

  1. Preheat oven to 325º, place almonds in a single layer on a rimmed baking sheet. Once oven is preheated roast almonds for approximately 15 minutes. Be carful not to over roast this will damage the good fat the almonds are loaded with.

  2. Once almonds are roasted and cooled to the touch place almonds in a high speed blender such as a Vitamix or BlendTec with one teaspoon of quality sea sale (optional). Turn blender on high and with provided plunger, plunge almonds down as the blender begins to break the almonds up and churn the nuts into butter. This takes approximately 3 to 5 minutes. Once almond butter has reached desired consistency, turn off blender and scoop almond butter into glass storage jar. Almond butter can be stored in cool dry cupboard up to 30 days or in the refrigerator for three months.

Organic Raw Almonds will increase the likelihood of you getting the most nutrient dense nut. In California if you are buying almonds in the grocery store they have been pasteurized, therefore potentially damaging the health benefits stated above. You can find Raw Almonds from Almond growers and at farmers markets. It’s important to meet your farmer when purchasing Almonds and ask questions regarding how the nuts ave been processed.
