Chia Seed Pudding with Blueberry Compote and Coconut Hemp Topping

Ingredients:

4 cups Organic Cashew Milk or nut milk of choice (Recipe on website)

8 - 2Tbsp servings of Organic Chia Seeds

32oz bag frozen Organic Blueberries or fresh organic blueberries (if in season)

2 Cups filtered water

1/2 to 3/4 Local Raw Honey

4 - 2inch sections of Organic Lemon Zest

2 to 4 scoops Grass Fed Collagen powder (optional)

Juice of 1 Organic Lemon

1/2 cup Organic Sunflower Seeds

1/2 cup Organic Pumpkin Seeds

1/2 Cup Organic Hemp Seeds

1/2 Cup Organic Ground Flax Seed

3/4 cup Organic Flaked for Shredded Unsweetened Coconut

Assembly:

  1. You need 8 wide mouth pint size glass jars with lids, fill each jar with 1/2 a cup nut milk of choice, add 2 Tbsp organic chia seeds to each jar, stir to incorporate. Secure lid and refrigerate. While pudding sets assemble blueberry compote’

  2. In a medium sauce pan add 2 cups filtered water, honey and lemon zest. Bring to a boil, reduce heat and let simmer for 5 minutes stirring occasionally to incorporate. Add blueberries, stir to toss with water honey lemon mixture return to a boil, reduce heat and simmer. Simmer berry mixture until berries begin to burst and and desired consistence is achieved. Remove lemon rind from the pot. Stir in collagen, if using, and juice of one lemon. Turn off heat and let blueberries cool. Once Blueberries are cooled add 1/4 to a 1/3 of a cup blueberry mixture to one of each chia seed pudding container. Return lid to jar and refrigerate.

  3. To make the coconut hemp topping. Grind the flax seed. Place all ingredients in a large jar with lid, roll or shake to combine. If you want a deeper toasted flavor. Toast the Sunflower seeds, Pumpkin seeds, and shredded or flaked coconut on a cookie sheet in a 325º oven for 8 to 12 minutes depending on your desire level of toast. Once toasted add to the other seeds and proceed as instructed above. Add nut topping to Chai Seed pudding with Blueberry compote prior to enjoying or transporting. If you’d like you can add 1 tsp Raw Local Honey or Manuka Honey of choice for a sweet touch.

Health Notes:

  1. Chia Seed Pudding with Blueberry Compote can be stored in the refrigerator for 7 to 10 days. Nut blend can be stored on the counter or in a cool dry place up to 14 days on in the refrigerator up to 30 days.
